Chicken fillet "Italiano"

Ingredients:

2 large chicken eggs;
800 gr. fresh tomato puree;
34 tsp. salt;
4 medium-sized chicken breasts;
100 gr. Parmesan cheese;
2 tbsp olive oil;
1 tsp sugar;
12 heads of onions (if the bulbs are small, you can whole);
2 garlic cloves;
50 gr. breadcrumbs;
1 tsp Oregano seasoning;
120 gr. Mozzarella cheese (or "Edam");
8 leaves of fresh basil;
Vegetable oil (for frying)

Peel the onion and grate it on a grater (you can chop it with a mixer) and transfer it to a roomy saucepan.
Next, pour in olive oil and fry until golden brown for about two to three minutes no more. The fire is at an average level.
Then add the garlic, after passing it through a special garlic press, mix and keep on fire for another one or two minutes.
Peel fresh tomatoes, cut out the stalk and grind to a puree state using a blender or food processor.
Put the resulting tomato puree in a saucepan where you fried the onion and garlic, mix everything.
Next, pour salt, sugar and oregano into the resulting mass and mix again.
We put the tomato mixture on a large fire and wait until it boils.
After that, we make the light weaker, and just simmer, stirring from time to time for ten minutes. You do not need to cover the puree with a lid. This will allow the water to evaporate faster. That's it. Turn off the burner and leave the pasta alone for a while.
And now we will deal directly with the breasts. They need to be thoroughly washed and beaten off so that the meat becomes soft, and only at the end rub with a small amount of salt.
After that, we take two comfortable cups or plates. One should be deep, because it will need to break the eggs and mix them with a fork or whisk. In another plate, pour the breadcrumbs.
Grate the Parmesan cheese (on the shallow side) and put it to the breadcrumbs.
Pour vegetable oil into a frying pan and put it on fire. Dip each breast first in an egg, and then in breadcrumbs mixed with "Parmesan" and put it to fry. You need to fry on both sides until the surface turns golden.
Pour half the amount of tomato mixture into a deep baking dish and put the fried chicken breasts in it.
Then add the rest of the sauce.
Chop the basil finely and sprinkle it on top of the dish.
"Mozzarella" (or "Edam") grate and also generously sprinkle them on the dish.
By the time the chicken fillet in the sauce can be baked, your oven should be very hot, at least 200 C. In such conditions, chicken breasts in sauce will be cooked from twenty minutes to half an hour.
